The saddle tree is the foundation of a good saddle. It is the frame that the leather is nailed/screwed on to. The Tree shape determines what the finished saddle will look like. 

How to measure a saddle tree.

I get my saddletrees right here in town from the tree shop next door. It is a wood tree covered with 3 layers of fiberglass. They come with a lifetime warranty against breakage in the normal use of the saddle.
